Most high end grocery stores have a great selection of marinated cheeses, olives and vegetables. While they are a real time-saver for putting together a last minute antipasto platter…they are really cost prohibitive. They sell by the pound at a cost of about $5.99. With a little planning, these recipes can be easily made ahead and stored in the refrigerator for about two weeks.

As you know, Rob & I live in Southwest Florida year-round.  We have lots of friends down here who are seasonal & don’t do much cooking while on their 6 month “vacation.  I love to cook, enjoy entertaining friends.  Eating dinner out isn’t really my thing especially during season. To crowed, to pricey and reservations only available at 5:00 or 9:00.

We were at Week’s Fish Market earlier this week to pick up some fresh grouper & some of their salmon dip, smoked and made on premises.  Week’s is a hidden gem tucked into a strip mall in Old Bonita Springs.

I have to admit I stole this recipe for The Pioneer Woman. I had one of those awful summer colds and I was laying on the couch feeling miserable watching the Food Network.
