When visiting our daughter Jen and her girls (Sophie & Georgia) over Memorial Day weekend in Upstate New York, she hosted a holiday family picnic.
As I have mentioned before, Georgie, aged 14 is a fabulous baker so of course she was put in charge of dessert. We racked our brains trying to think of a red, white and blue theme. My suggestion was her specialty cupcakes but she wanted to make something different, so she settled on individual mixed fruit parfaits with a little twist. The previous day she had baked a pan of her famous decadent brownies, so she added a layer of diced brownies to the dessert. DELICIOUS!
It was wonderful seeing family again and we all wearing sweatshirts huddled around the bonfire to keep warm, devoured Georgie’s newest creation. GREAT JOB GEORGIA!

1 1/2 cups heavy cream
1/4 cup granulated sugar
1- 8 oz. cream cheese
2 cups diced brownies
10 oz. strawberries
6 oz. blueberries
- In a large bowl, combine heavy cream and granulated sugar, using a hand-held mixer. (Recommend: KitchenAid, see link above.) Beat on high until soft peaks hold.
- In a separate bowl, beat cream cheese until fluffy. Fold cream cheese into whipped cream.
- Assemble goblets with alternating layers of whipped cream and cream cheese mixture , brownie and fruit. Keep refrigerated until ready to serve.
