Fresh Watermelon Mojitos

Last year for Mother’s Day my husband Rob wouldn’t let me lift a finger! He was wonderful. Got up early and made coffee. Got my newspaper. Prepared all the meals. Cleaned up the kitchen. Absolutely everything! The best was going to the beach when he opened the cooler and pulled out a pitcher of Fresh Watermelon Mojitos! As we toasted the horizon, he presented me with a simple white card on which he wrote, “Easy Love!” I’ll never forget it.

I’m hoping he’ll do a repeat performance this coming Mother’s Day!

Love at first taste!

  • 30 large fresh mint leaves

  • 4 thick slices of fresh watermelon, cubed

  • 10 ounce light rum

  • 1/2 cup Barsmith Simple Syrup

  • 1/3 cup freshly squeezed lime juice (3 limes)

  • Mash mint leaves in a small bowl. Add some sugar to help break up the leaves and incorporate the oils from the mint leaves.
  • Place the watermelon, rum, simple syrup and lime juice in a Cuisinart 10-cup Bar Blender and blend until smooth. This blender has a “smoothie” button which blends it perfectly. Stir to get the froth to go down.
  • Put the mashe mint leaves into a large glass pitcher and add in the watermelon mixture. Stir to combine the mint with the juice.
  • Place ice cubes in 6 glasses and pour the mojito mixture into the glasses. Garnish with sprigs of fresh mint and small wedges of watermelon with rinds.
